It is easy to calculate the size of the boiler, but you have not given enough information.
First to heat 20 gallons of liquid to boiling point, we can maybe assume that the liquid is first average supply temperature of 50 deg F, heating to 212 deg F and this would be about 27,000 BTU. Then the question is how long do you want this to take? One hour heat up will be 27K BTU/hr, 1/2 hour heat up will be twice as much, etc.
For the heating of water from 40-180 deg F, is this the same 20 Gallons? or is this a flow of water in GPM, you need both amount and a time frame to calculate load. Then we can go ahead and size the boiler.
