Check out ebay for a pretty much an endless stream of engineering and technical books on just about any subject you can imagine. Publications like the old Audels books have a ton of info in them, and a huge chunk of it is still valid. Physics, chemistry and the principles of mechanical & electrical technology have not changed. Look for "Audels Answers On Refrigeration" and the "Audels Refrigeration and Air Conditioning Guide". They won't, of course, cover things like PLCs, new synthetic lube oils, or the newer high speed/high efficiency machines.
If you don't get the responses you need here, try www.area51hvac.com and go to the bulletin board subsite "Groom Lake". Lots of refrigeration guys there who can likely point you in the right direction.
