I figured out you do it for kinda research.
What you could do.Use some tiny hot plate( there are some about 3-4" in DIA for worm up food) with variable transformer, which will aloud you to change temperature, put a loop of 5/16 copper tube approximately over it and blow your steam through it.
To mesure temperature you can use tiny thermocouple attachment to Fluck multimeter, just stick it inside your tube through a little hole.
BTW if steam flow from your generator is not constant the temperature will fluctuate as well.
