You do not want to use saddles; use double-wall vent for your gas appliances, all the way to the appliances.

The size of the venting is related to the outlet of the appliance, the input of the appliance, the height of the chimney and its type, the offset of the appliance from the chimney, how many appliances are on a chimney, and the type of fuel.

Your local supplier or manufacturer of the chimney materials will usually make the time to help you size and select the materials.
