New GAs Boiler creates Loud Banging and Significant water leak...

Hi-
I've read many responses to the banging/hammering questions...Mine is unique in that we have a pipe sticking out of our 2nd fl pantry area. This pipe once
had a radiator on it. When we redesigned the kitchen we decided we didn't really want it. We never had it capped or sealed. Two weeks ago we had our boiler replaced. It seems since then the banging is unbearable. Further, if I try to relieve the banging by opening the adjustment valve we better be prepared to soak up a gallon or more of dirty water. Any suggestions to properly cap of this pipe and rid the banging...it's driving us crazy! Also, we are new homeowners therefore we don't understand technical terms for all the parts of the boiler (so if you can explain in simpleton language it would be a big help).
Lastly, should be arrange for a cleaning/service call once a year? I've been reading about skimming/water treatment etc. Is this something that should be done before/after heating season to prepare for the next season? Thanks
